Pork and Egg Burgers

I occasionally follow Slimming World (I've fallen a little off the wagon and am desperately trying to get back on board), one of the things that I love about the SW plan is the freedom that comes with it, most food is possible provided that you cook it in the right way. Burgers and chips on a diet, no problem!


These pork and egg burgers are my latest pride and joy. They are Syn free on the extra easy plan, super easy to make and very aesthetically pleasing, oh and they taste pretty good too! 


You will need : Extra lean pork mince, one egg per burger, fry light and seasoning. I haven't added an amount for the pork as this really is a simple, flexible recipe - you can make them as big or small as you like, I personally tend to make these when I have a little leftover pork mince.

Add salt and any other required seasoning to your pork mince (I just use salt & pepper, hubby throws in every single spice/herb going!) and roll into doughnut shaped rings. 


Carefully transfer the pork 'doughnuts' into a pan sprayed with Fry Light and crack an egg into the centre of each one. Your egg may or may not leak out of the bottom, this really doesn't matter as the majority will stay in the centre.


The cooking time is dependant on the amount of mince that you use, mine take around 10 minutes on each side but I do tend to overcook meat. 

When the bottom half has browned nicely transfer the pan to the grill to cook the top half of the burgers on a medium heat. You can flip the burgers and continue to cook in the pan if you so wish, however I personally find that this ruins how the egg looks.


Sprinkle on some chives to make them look really awesome!

Serve with Slimming World style chips and a salad for a delicious, Syn free meal.

As I’m writing this, I’m finding it hard to believe that within the space of a couple of months, I've reached my target weight, been voted ‘Woman of the Year’ and ‘Miss Slinky’ at my Slimming World group and fitted into size 12 tops for the first time…ever.

In hindsight, weighing in at 14st 7lbs on New Year’s Eve 2011 at a house party was a blessing in disguise. Refusing to weigh myself for years prior to this had left me with a warped sense of just how heavy I was and how unhealthy my eating habits were. I needed that shock (followed by shots and sulking) to make big changes.

I've always loved food and tended to overeat. My nickname as a child was the ‘Human Dustbin’ as I’d go through seconds and thirds. Through High School and University, I never felt like the ‘Big One’, but looking back at photos, my outfits lacked colour and I never felt completely like the ‘Me’ I feel like now.

Walking into a weight-loss group is always going to be scary, but since that first meeting, I haven’t looked back. This sounds incredibly corny, but Slimming World really has changed my life. I’m almost evangelical about the plan, so I won’t start or else I’ll never stop. What I can say is: BIG PORTIONS and some CHOCOLATE EVERY DAY. What more could a girl ask for?

For a few years in my late teens and early twenties, I suffered horrendous back pain which got worse the older (and heavier) I got. After trips to A+E, boxes of pills and courses of physio, I was thoroughly miserable. Magically, the pain has decreased with my weight loss to the point where I rarely need pain killers. It’s been worth going without full-fat mayo on everything for this reason alone!

My wardrobe is slowly filling with clothes I never would have worn – leather-look skater skirt, anyone? Something very special will be added to my expanding wardrobe next year – my beautiful Wedding dress. I honestly cannot wait to walk down that aisle in May feeling happy, healthy and slim.

My weight loss journey up until this point has been relatively quick one – I’ve lost 3st 7.5lbs since January – but I know that this is really only the beginning. It’s going to be a battle to maintain my weight loss, but it’s one I’m determined I’m going to win.

First and foremost, thank you to the lovely team at Where are my Knees? for giving me the opportunity to write a guest post for them.

The first time I joined Slimming World was three and a half years ago and I had lost 3 stone in preparation for my wedding. I felt great yet slowly I let (most of) the weight creep back on. This year two things made me take the plunge and go back. First, the doctor made it clear it was time to do something and it would help make my asthma better. The second thing is much more vain. I went on holiday to France over the summer and I felt so uncomfortable and downright fat next to my slimmer friends. I joined Slimming World again at the start of November and I've lost 9 pounds so far. Here's to many more!


A Typical Slimming World Day

I’m sure many of you are familiar with how Slimming World works but just for those who don’t. It works with Green Days and Original Days (red days). On Green days, ‘free’ foods are mostly carbohydrates (pasta, potatoes, rice) and on Original days, it’s all about meat and fish. You also get ‘Healthy Extras’ for things like cereals, bread, milk, cheese etc. You also get Syns for unhealthy/ naughty foods, you have roughly 10 a day and unlike Weight Watchers where you get a weekly allowance, these cannot be ‘saved up’.

Breakfast:


Fat Free yogurt and porridge sachet. The yogurt is free and the porridge counts as a Healthy Extra b.

Break time ( I’m a teacher):



Pear, 2 Alpen light bars as my second Healthy Extra b.  The new Cherry Bakewell ones are to die for

Lunch:




Lambs lettuce, cherry tomatoes, tuna (in spring water) as Healthy Extra a, half an avocado (7 Syns) , balsamic vinegar (not on picture)

Dinner:




Salmon curry, 1  medium size salmon fillet as my second Healthy Extra a, rice, chopped tomatoes, fat free yogurt, loads of spices to taste, we used fennel seeds, turmeric, cumic, cloves and garam masala.

I enjoy Slimming World because I never feel hungry and even if it does require a bit of planning ahead, it is very manageable and affordable.

I have always been overweight. I think from the age of 10 I  noticed that I was bigger than all of my friends and it used to bother me a lot. I used to dance ballet and tap and love it, but gave up when I was 13 as I thought I was too fat to continue. I could never wear the same clothes as my friends and had to wear adult size clothes. By the time I was 16 I was a size 14/16 and after I met my first boyfriend my weight went up and up and I was a size 16/18 by the time I was 18. My diet was terrible and I was having takeaways at least 2 times a week. 

I always used to tell myself that I was overweight and there was nothing I could do about it, even though looking back my diet was terrible. I was never happy with the way I looked and was quite unhealthy. 

At 23 and after my second baby I was pushing a size 20. One day I decided that enough is enough; I wanted to loose weigh and get to a healthy BMI. I finally accepted that it was my fault and there was something I could do about it. I wanted to set a good example to my children by being fit and active with a healthy diet. 

I knew I couldn't do it by myself as I had tried and failed many diets, including calorie counting and slim-fast. I looked into the Cambridge diet but found that to be too costly, and wanted to do a diet where I could eat the same meals as my family. 

I joined a local Slimming World group in August 2011, and found the plan great to fit around my busy family orientated life. The whole family could eat the same meals as me as the plan is based on a healthy low fat, high fibre diet. The amount of food you are allowed on the plan means that there is no need to ever get hungry. 

Going to the group every week is really motivating, and I have met a lot of lovely people who are all so friendly and supportive. I am quite an introverted person and it was very hard for me to join the group but I am so glad I did it has truly changed my life. I know without the group I would have given up by now but going every week and seeing how well my friends have done really motivates me.  

I always have a treat once a week, usually on a Thursday after weighing. I love Mexican food so have Fajitas or Quesidillas I don't go too crazy. Once in a while I will have a take away but honestly I have gone off them so much now and prefer chicken and rice. 

It hasn't been plain sailing and I have had quite a few weeks where I have had a gain, my biggest being 3lbs. But I know that its not easy and I have to keep going.  

I have lost 34 pounds to date, which is 2 Stone 6 pounds. My BMI has gone from Obese at 32.6 to overweight at 26.6. I was pushing a size 20 before I started and now I am a comfortable 14, sometimes a 12. 

I still want to loose at least another 21 pounds, and have a way to go as my weight loss has slowed down a lot. I seem to have hit a bit of a wall at the moment with my weight fluctuating, but I am confident that I will do it, I know if I stick to the plan 100% I will loose weight. 

I have just started doing a weekly weight loss update post every Thursday over on my blog, and plan to do posts on some of my favourite slimming world friendly recipes.

My name is Rebecca Fyfe (Becky) and I have lost more weight than I weigh. When I joined Slimming World, I weighed 19 stone 6 ½ pounds. I now weigh 9 stone 1 pound and have lost 10 stone 5 ½ lbs. I am a mom to seven kids, ages 19, 18, 17, 9, 6, 5 and 2.



At my highest weight, I developed an injury called plantar fasciitis, which is basically a chronic inflammation of my heels. It made walking excruciatingly painful. Just walking across a room caused me pain. I hobbled around, slowly, as if I was decades older than my age. My husband loved to hike and take long walks, but I was in too much pain to join him. Also diabetes and arthritis of the knees ran in my family, and I knew that, if I didn’t do anything about my weight , I wasn’t just heading towards diabetes and arthritis but I was heading towards an early grave. I have seven beautiful children, and I couldn’t do that to them, let them lose their mother at such young ages.

But still, I couldn’t seem to take those first steps toward getting healthy. In my 5th pregnancy, I developed high blood pressure and, during the delivery, it spiked so high that I almost died. Still, I remained overweight, and wound up hospitalized towards the end of my 6th pregnancy because of high blood pressure again. I told myself that, if I ever had another baby, I would get myself healthy before getting pregnant, but then I got pregnant with my seventh baby before I had lost any of the excess weight. I was morbidly obese and I knew that becoming healthy was a real necessity; I couldn’t wait any longer.

I waited until my 12th week of pregnancy to get past the precarious first trimester (but before I had started gaining any pregnancy-related weight), and then I called up my sister-in-law. I had heard that she had lost over 5 stone and that she looked incredible. I hadn’t seen her in a long time, but I asked her if she would take me to one of her Slimming World meetings. When she picked me up for the meeting, I was amazed by how much different she looked with so much weight lost!

I wasn’t even sure, when I first started, if this was something I would stick to, but I knew I had to give it a try. And I lost weight the first week, despite being in my second trimester of pregnancy. My goal was to not gain any weight during the pregnancy, but instead, as of a day before my baby was born, I had already lost 3 stone 4 lbs. Within 2 ½ weeks of the baby’s birth, I dropped an additional 1 stone 5 lbs, for a total loss of 4 stone 9 lbs LOST during my pregnancy.

Within a year of joining Slimming World, I had lost 7 stone 2 lbs, which is equal to 100 pounds. I lost the final 37 pounds to reach my goal weight in the next 9 months. I lost 9 stone 11 ½ pounds in 1 year and 9 months. Over time, while at target, I lost a bit more and reached 10 stone 5 ½ lbs lost in total and changed my target to my new weight.

It has changed my life. My plantar fasciitis disappeared completely, despite the fact that I was told I would suffer with it for life. I have more energy. My blood pressure during my last pregnancy remained normal. I can play with my kids now, when before I never had the energy and it hurt too much. My husband and I walk everywhere. I exercise on the elliptical crosstrainer, by walking and also use the Wii Fit with hand weights. (We’ve even had our crosstrainer replaced eight times because they keep breaking on us! They apparently make them these days thinking that people don’t actually use them!) Needing a new challenge, my husband and I just started running outdoors about a week and a half ago. We are only able to run a mile in ten minutes right now (and it KILLS me!), but we’re planning on increasing that soon. I never thought I’d see the day when I would actually choose to run!

I love going to group meetings. I have made some of my best friends at my meetings. My husband and I both cook dishes to bring along for the “Food Tasting” nights, and the meetings are something I look forward too. Everyone there is so supportive and encouraging. My Slimming World consultant Sharon is wonderful. My husband joined with me, having lost some weight before joining just by eating what I was eating., and has lost a total of around 7 stone himself. My kids are all really proud of me and love the healthy food we cook and going for long nature walks with us.

I have family in the US, and my dad has been really struggling with his diabetes. He says I have inspired him and he has started losing weight too finally. He’s lost 1 stone 4 pounds so far, and my mom has lost 10 pounds. I have a neighbour who joined Slimming World. She said she kept seeing this lady walking by her window getting slimmer and slimmer and it made her want to lose weight too.

I have been blogging about my weight loss on Skinny Dreaming almost since the beginning, and the Facebook page for my blog has over 500 fans. I share recipes that I have come up with like a Garlic Pizza Crust made with Scan Bran.

Losing so much weight has helped me in other areas of my life too. Ever since I was a child, I wanted to be a writer, but somewhere along the way I lost confidence in myself and in my writing. Managing to lose so much weight has helped me gain my confidence back, not just in my appearance but in every aspect of my life. I’m writing again. I’ve written three children’s stories that I am trying to get published and I am working on a two novels. I also have several e-books coming out this year. I have been writing for a monthly magazine in California on the topic of helping our kids lead healthy lives.

I have seven kids, but I was able to make the time to exercise and cook healthy meals. There’s nothing overly special about me; I’m just like everyone else. The one thing I wish more people realized is that, if I can do this, anyone can!

If you are in the same boat I used to be in, if you have a huge amount of weight to lose and it looks like to mighty of a task for you to achieve, just take it one step at a time. Set up mini goals and focus on one mini goal at a time rather than looking at the bigger picture. I know that, with a huge amount of weight to lose, it can seem overwhelming, and it’s easy to tell yourself that you won’t be able to do it, so why even bother, but you can’t look at it this way. Take it one small goal at a time and eventually, you will start reaching those larger goals.
It’s important that you believe in yourself and in your ability to do this. Look at other people who have succeeded at weight loss. If they can do it, so can you. Quit waiting around for motivation. I had tons of motivation for losing the weight, but it took me years before i ever actually did anything about it. I had seven beautiful children and a loving husband who needed me to be healthy for them. I lacked energy. I was depressed and unhappy with my appearance. My health was failing. All of that sounds like pretty good motivation for wanting to change, but motivation can’t make you do the work to get you to your goals. Motivation gives you reasons to strive for those goals, but you still have to be willing to work towards them yourself.

Instead of waiting around for this magical “motivation” to appear and push you into doing what you need to do, treat your weight loss as though it just another part of your daily routine. You don’t shower each day just because you like to shower. You shower because it is necessary and part of your daily routine. Healthy eating and daily exercise should be treated the same way.
And because so many people have told me since I lost the weight, “I wish I could do what you have done,” I am going to stress this point: YOU CAN!!!!

Creamy Beef Goulash

Slimming World have just released another amazing cookery book.  If you follow Slimming World I really recommend you purchase a few of their cook books.  They are well priced (this one is just £4.99) and packed full of tasty recipes. 

After flicking the pages and drooling over most of the pictures I settled on creamy beef goulash as the first recipe to try from this book.  It looks amazing!!

Serves 4-6
Free on original
Free on Extra Easy

Freezer friendly
Ready in 2 hours 10 minutes

400g can chopped tomatoes
1 large onion, peeled and finely chopped
300g chestnut mushrooms, sliced (I skipped these, yuck!)
2 red peppers, deseeded and diced
1kg lean braising steak, all visible fat removed, cut into thin strips
2 tbsp smoked paprika
1/2 tsp caraway seeds
1 bay leaf
a pinch of marjoram
1 tsp dried mixed herbs
salt and freshly ground black pepper
250g fat free natural fromage frais

Preheat the oven to 150°C/Gas 2. Put the tomatoes and onion in a saucepan and place over a medium heat.  Bring to the boil, reduce the heat and cook gently for 10-12 minutes, until the onions have softened.

Stir in the mushrooms and peppers and cook for a further 6-8 minutes.

Place the steak in an ovenproof dish, sprinkle over the paprika, caraway seeds, bay leaf, marjoram and dried herbs.  Season well and pour over the tomato mixture.  Cover tightly and cook in the oven for 1½ hours or until the meat is tender.

Beat the fromage frais until smooth and pour over the casserole before serving,  Cabbage and carrots would make a perfect accompaniment.

This recipe would also work well with pork or lamb.

Unfortunately I was so excited I forgot to take a photo! Ooops.  I had my parents round for dinner the night I made this and they both loved it too, my Dad asked for the recipe as he couldn't believe it was diet food it was that tasty, thanks Slimming World!

We're very happy to be sharing our first guest post written by a guy this week, Chris works as a financial blogger for moneysupermarket.com/life-insurance, and as such spends a lot of his time writing about how to save money and keep yourself protected. He’s also taking a leaf out of his own book and trying to get himself fit, as well as save a few pennies. He’s 24 now and needs to grow up now, ferchristsake.

From fat to fit - or at least most of the way there....




My BMI is 28.5; that makes me overweight. Actually, that makes me damn near obese: If I put on an extra 12 or 13 pounds I would tip over into the “obese” category. Not exactly stellar, I know. However, when you consider that five months ago my BMI was 38.4 and climbing a flight of stairs used to leave me out of breath, I think I’ve done pretty well – and at the same time I went on a financial diet too, cutting my expenses right down.

How have I done it? Well I’m afraid there’s no great secret, “one weird tip” or magic answer, I’ve done it using a combination of diet, willpower and damned hard work, but I’m here to share my story with you regardless. So basically what happened was, in March I found myself homeless, and no longer in the relationship that I had been in for the last 5 years, which I’m sure you can agree is a pretty crap thing to happen to you, and on a Sunday of all days.

I got a roof over my head pretty quickly (my friends are ace like that) and once I was settled in, began trying to decide how I was going to rebuild my life, lose a bit (lot) of weight and claw my way out of the financial hole I was in. I’d recently read this report in work as research for something else and it got me thinking about my weight, I decided that a fresh start was just what I needed. Fun, huh?

First off, smoking and drinking were going to have to go for two reasons: one, money, and two: health. A night out on the beers is complemented by 20 Marlboro, and when you actually stop and tot up just how much you can spend on the two in a single evening (Then factor in a taxi and some godawful fried monstrosity from the chippy) the numbers are pretty shocking. Further to that, we all know how smoking is bad for you, but have you ever looked at how many calories there are in a pint or a bottle of cider? The answer is bloody loads. Three or four pints are the equivalent of a decent meal. So yeah, they got cut out pronto and I also started going to Slimming World. Not the coolest thing for a guy in his mid twenties to do, I know, but coincidentally I had happened to bump into an old friend around the same time who had had great results with the plan so I thought “Sod it, I’ll have a go”.

I spent the first week absolutely stuffed (as most people do on Slimming World, I’ve noticed) and convinced I hadn’t lost anything; but lo and behold, when the first weighday rolled round, I’d lost 4lbs. Pretty good, I think you’ll agree. What was even better was the fact that each and every week, I continued to lose – still am, in fact – and at the time of writing I’ve lost 77lbs altogether and am eagerly awaiting my next weigh in!

Now, some of you are probably reading this and thinking “Hang on a minute, I thought you were supposed to be saving money here? Doesn’t Slimming World cost money?” – And of course you’re right on both counts. However, Slimming World isn’t expensive (£5 a week) and I honestly think that having a support group there if you need it and the regularity of weighdays encourages you to keep at it, meaning you consistently lose. Also, Slimming World is all about producing good food from raw ingredients which makes life far easier once you come to the end of your time on the diet. I have completely changed my attitude towards food now, and I think a lot of people who do SW (That’s what the cool kids call it) find the same thing – meaning you don’t end up spending money on special supplements, powders or shakes, or end up simply yoyo dieting - Education is very important.

The other big, big change in my life is exercise. I used to do… Well none at all, really. I owned a bike, but it sat in the shed collecting dust and not doing much else. Luckily, in my new pad there was an exercise bike which meant that I could sweat and grunt in private (Oo-er!) without anyone seeing me, and a couple of hours a week on there cut through the fat in my thighs and calves like butter; I’m in better shape now than I have ever been before which has allowed me to get back on my actual bike; Quite often I now do ten mile rides after work and before tea.

This is actually my biggest financial tip: Don’t join a gym unless you absolutely have to. Get out and go jogging or bike riding, take the dog on a good long walk, spend a day climbing trees in the park; just get active and enjoy it! The more you look at exercise as a chore, the less likely you are to take it on. I quite often stay out on the bike far longer than planned simply because I’m enjoying myself, and the longer you get your heart and your muscles going, the better shape you’ll be in for it.

I’ve actually found that dieting has indirectly saved me money all over the place: I don’t have to buy clothes from “Big and Tall” shops any more with their big and tall prices, I can now pop into Primark like everybody else. I might still be a big Large, but I’m a big set guy anyway, and the fact that I can shop like normal people again is pretty nice. I’ve also found my shopping bills decreasing rapidly; a few days worth of fruit and veg will often cost you the same as a single microwave meal , and buying things like rice and pasta in bulk saves you a tremendous amount of money. I’ve become a master of producing good food using just a few cheap, simple ingredients, not to mention when you’re not ordering from the Chinese or Pizza place a couple of times a week you can save a boatload of cash.

The best advice I can offer anyone however, is this: Be determined. Yes, it’ll be hard at times. You’ll have roadblocks. You might even have a few lapses. However, just remember this: You’re doing this for yourself, not for anyone else. If you screw up don’t worry about it, but be realistic enough to know that it’s nobody’s fault but your own – just get back on the horse and keep going.

Guest Post - Homemade Burger and Slimming World Chips

I’m Jen from Manchester. After years of yo-yo dieting and getting nowhere, I’m back on the straight and narrow and losing weight on Slimming World. I’m aiming to be a few stone lighter for a trip to New Zealand and so I can fit into more pretty vintage dresses!


Homemade Burger and Slimming World Chips
I’ve found that since starting Slimming World I have eaten burger and chips more times than I have in the last few years. “Burger and chips?!” you cry; “Yes!” I reply. Unbelievably, they are entirely free on Slimming World and probably none too bad on any other healthy eating plan you care to mention!
The chips are a creation of Slimming World (http://www.slimmingworld.com/recipes/syn-free-chips.aspx), but the burgers are my mum’s recipe. As a hater of Marmite, I know you’ll be worried about the marmite content in the burgers, but trust me, you can’t taste it (you just have to touch it).
Serves 4


Ingredients
For the chips:
908g/2lb medium sized Maris Piper potatoes
Fry Light spray
crushed sea salt and malt vinegar
For the burgers:
500g pack extra lean mince
1 small onion, very finely diced
1 tsp marmite
Salt & pepper

1. Preheat the oven to 240°C/Gas 9. Peel the potatoes using a potato peeler and remove any blemishes or 'eyes'. Slice lengthwise into approx ½in/1cm thick rectangular chips.
2. Bring a large saucepan of salted water to the boil. Add the chips and cook for 4 minutes. Drain and leave aside for 10 minutes to dry.
3. Return the chips to the dry saucepan, cover with a lid and shake to ''rough up'' the edges of the chips - this roughness is important to the texture of the chips.
4. Spray a metal baking tray with Fry Light. Transfer the chips to the tray, spray lightly with Fry Light and bake in the oven for 20-25 minutes, turning occasionally.
5. While the chips are cooking, place the mince in a large bowl and add the onion, salt and pepper and the marmite. You’re going to have to get mucky (and covered in marmite) as you need to mix/squidge all of this together with your hands.
6. When the burger mix is combined, it should stick together nicely. Form into large balls and flatten into patties (this much mince makes 4 MASSIVE burgers which is fine if you’re on Slimming World as it’s all free, but adjust the size if you’re following another programme).
7. Cook the burgers. I tend to fry them for about 5 minutes on each side on a griddle pan using Fry Lite, but you could grill just as easily.
8. When the chips are golden brown, drain them on absorbent kitchen paper and serve with salt and vinegar. When the burgers are ready, serve in wholemeal baps with salad and your sauce of choice!

Slimming World Syn Free Quiche

I really wouldn't have made this quiche if I hadn't have tried it first.  It contains pasta. Not just any pasta but a packet of pasta n sauce!! I normally hate the stuff but at my last class we had a tasting night and I decided to live dangerously and give it a try.  And boy am I glad I did, it is seriously amazing!!  I have made a few amendments to the original recipe and made a massive quiche for my dinner tonight and the next few lunches.  I don't have a flan tin so I just lined an 8" cake tin with grease proof paper and it worked just as well.


Ingredients
One packet of pasta n sauce ( I used a cheesy one)
One onion roughly chopped
Four eggs
A tub of very low fat cottage cheese (I chose the chive variety)

Make up the pasta n sauce as directed but replace the milk with water.  Add the onions at this stage.  Once cooked whisk in the eggs and add the cottage cheese.  Pour into your dish and cook at 200° until set.  Mine was in the oven for about 30 minutes.

The basic syn free quiche is really versatile, incredibly yummy and just as simple to make.  You can add any veggies you fancy or even ham or salmon depending on which plan you are following.

Basic syn free quiche recipe
One large tub of very low fat cottage cheese
Four eggs

Whisk the ingredients together and cook as above.  You can line the dish with spinach leaves, add peppers, leeks, onions or even top with tomatoes slices.  The choices are endless!

I am very, very greedy. There, I’ve said it. I am a great big pig. Frequently I will sit at the dinner table, eat everything on my plate and then eat the leftovers on my boyfriend’s too. I can happily eat three full meals a day and snack in-between. My collection of recipe books is taking over my house, and I pore over food magazines as soon as I get them. I like food. I like cooking it, I like tasting it, I like eating it.

I’m not ashamed of it anymore. Does my being greedy hurt anyone? No. If I go back for seconds, or even thirds, the world isn’t going to end. No-one is going to cry if I eat half of that box of Krispy Kremes in one go. There are worse things in the world than being a pig. I’ve made my peace with it.

Being greedy does, however, tend to have the side effect of weight gain. Two and a half years ago I met a lovely man who shares my love of delicious food. I was always a “big girl”, to use that horrible euphemism favoured by nurses, teachers and overly sensitive family members, but in a year I’d put on two stone. I no longer just a big girl. I was fat.


Please don’t think I’m saying there is something wrong with being fat. Being fat is fine — all these wonderful people say it much better than I ever could. But there is something wrong with being unhappy. And I was really, really unhappy.

So I started dieting. I’d tried other diets before (It’s amazing what teenage girls will do to stop other teenage girls making them cry for eating mashed potato) and none of them had every worked. But Helen had lost a staggering amount on Slimming World, and my mother had lost several stone with them a few years ago. So along to Slimming World I went.

It’s been said before about the kindness of the consultants, the friendly atmosphere and the fantastic level of encouragement you get from every single member of the group in Slimming World. I don’t think I need to tell you about that. What I do want to tell you about is the food.

Oh, the food.










The food on Slimming World is incredible. The meals listed above are just a few of my favourites, but there’s a seemingly endless supply of new recipes to try on their website, in their magazines or in their numerous cookbooks.

I’ve always loved baking, but through Slimming World I fell in love with cooking. If I thought I liked my food before it is nothing compared to now — absolutely everything I eat is delicious. And I don’t have to weigh out portions of those soft-and-fluffy on the inside but crisp-and-golden on the outside roast potatoes, or that spicy paprika chicken — I can have as much as I like, so my greedy nature stays happy! And if there is something “naughty” I want, like the raspberry cupcakes I make or an Eton mess, I can just have it and count it towards my Syns.

But the best thing is that I’m losing weight with all this yummy food. I’ve lost 2 stone 9 pounds since I joined in January (I had a few hiccups — my 21st birthday was celebrated with a weekend in Paris where I ate so much my stomach bloated and I had to pretend I was pregnant) without once feeling deprived, or like I was missing out.


For me, Slimming World isn’t about losing weight as quickly as possible — although that’s certainly what happens, with one man losing 13.5 pounds in one week in my group! Slimming World is about living. I want to lose weight and be slim, but that is nowhere near as important to me as being able to live my life. If I’m celebrating my friend’s birthday, I want to be able to have cake. I don’t want to spend my life eating salads and bland meals so that I look good in a bikini. I want to enjoy myself. I want every meal to be as delicious as it can possibly be. And thanks to Slimming World and my growing culinary prowess, it can be.

Slimming World - Ginger Scan Bran Cake

Another scan bran recipe for you as promised last week.  This one is really scrummy especially if you add a sachet of options jazzy ginger hot chocolate to the mix! If you do this you need to add 2 extra syns.  If you eat the whole cake (!!) you can deduct 5 syns and count the scan bran as a healthy extra B.

Ginger Scan Bran Cake


Ingredients
 
5 Scan Bran
2 large carrots, finely grated
3 or 4 tbsp artificial sweetener (or to taste)
2 tsp ground ginger
1 tsp of ground all-spice (or to taste)
1 tsp cinnamon
28g finely chopped stem ginger
3 eggs, beaten

Method


Pour boiling water over the Scan Bran and leave for 1 minute so that it softens, then drain and mash.
Blend the Scan Bran, carrot, sweetener, ground ginger, all-spice, cinnamon and stem ginger, mixing very thoroughly. Then add the beaten eggs and stir until completely mixed. Transfer the mixture into a microwaveable dish – about 6½in/16cm in diameter.
Microwave on high for about 15 minutes, or until cooked. The end product should be reasonably moist.


It's just 9 syns for the whole cake and can be divided into as many slices as you like.

Slimming World - Scan Bran

Scan Bran is one of Slimming Worlds best weapons, apparently you can guarantee loses of at least 2lbs on weeks you fit lots in.  This didn't work for me the first week but I am assuming my body needed to get used to unrefined fibre before I saw the benefits.


It's like a harder, more cardboard like version of ryvita. Now I know this makes me a bit of a freak but I quite like it plain!  Other than that I usually top it with extra light cheese triangles and nibble on it for breakfast.  It's very filling and it is meant to have all the other benefits associated with lots of fibre ;) Just make sure you drink plenty of water with it or you could have unwanted consequences...

Lots of Slimming World followers have been really inventive with scan bran to make it more palatable and easier to fit into their diet which includes a variety of cakes!  I decided that in the name of research I really should test some of these.  I will post a recipe a week for the next few weeks, first up:

Curly Wurly Scan Bran Cake


Ingredients
4 Scan Bran
2 eggs
3 or 4 tbsp sweetener (to taste)
1 sachet Belgian Choc Options
26g Curly Wurly bar
Soak the Scan Bran in boiling water to soften. Then drain and mash.
Beat the eggs and stir into mix, along with the sweetener and Belgian Choc Options
Chop the Curly Wurly into pieces and add to the mix
Pour the mixture into a microwavable bowl and cook for around 6 minutes
When cooked the cake will be springy to the touch and will have pulled away from the side

You can also cook the cake on 200°C/Gas Mark 6 for approximately 30 minutes

It's just 12 Syns for the whole cake and can be divided into as many slices as you like



I was pleasantly surprised just how nice this cake is, I gave my boyfriend some to try and he wanted more!! I couldn't really taste the curly wurly to be honest so am going to try it without next time which would be just 6 syns for the whole cake :)

Slimming World - Joe's Sausages

Since starting Slimming World I have practically become a vegetarian.  I am a carb addict so find it much easier to follow green days over red days and don't trust myself not to over indulge on extra easy so cutting out meat has been the easiest solution.  As summer is coming up and BBQ's suck without sausages and burgers I decided to give Joe's Sausages a go and see how I get on following red days.

Joe's sell sausages, marinated meats, grill sticks and burgers all of which are certified free foods on Slimming World red days:


I placed my order and chose my delivery day and then dreamed about sausages!  I ordered several packs of sausages, burgers and various flavoured chicken.  Joe's has a minimum order of 8 packs so you could always order with a friend or another Slimming World member at your local group.


I wanted some meat for a family BBQ but couldn't wait and planned a red day in anticipation of their arrival...I decided to treat myself to a mixed grill along with some gammon and steak and syn free pepper sauce, yum! 


The chicken was gorgeous, exactly as I had expected it to be.  The sausage looked like a normal sausage but had a firmer texture.  I guess that's from removing the fat and packing more lean meat into it.  My boyfriend also tried both and gave them the thumbs up too.  Can't wait to try the burgers at the BBQ now!

Oh and Joe's website says that each sausage is only 1 point on Weight Watchers so you guys can join in on the action too, I definitely recommend them.

I have always been big, since about 10 years of age I knew I was bigger than other children, not a great deal but it was still noticable. I only really cared about my weight when I was 12, I was at a sleepover and there were 6 of us, 5 average weight girls and me.  We all got weighed (cannot even remember why this happened!) and they all weighed between 7 and 8 stone and I was just short of 10 stone.
That was the first time I'd ever known my weight and even though I was not sure what stone and pounds were I knew I was abnormal. I still did not do anything about it, I did not know about dieting or anything so I just carried on as normal.

Fast forward 5 years, I am 17, I have done several diets - closer diets, slimfast, celebrity slim and Weight Watchers, I'm sure there are probably some more too. The most I lost on any was half a stone, not enough when I am now 14 and a half stone. I was stuck in a rut I did not know what else to do.

In April 2009 I met my current partner Liam, he is big too and seems to love me as I am, so I completely forget about losing weight. We fall in love very quickly, our nights are spent on three course meals out, pizza and wine in and endless take aways. By the time we get engaged in June 2009 I am 15 stone, thats half a stone gained in 6 weeks. We book our first holiday together in July 2009, half board, lots of alcohol and bad food, we come back from Benidorm almost a stone heavier, I weigh in at my heaviest ever, 15 stone 9lb and a size 18, although the 18s are tight I should be in 20s. We get home look at our photos from our engagement party and holiday and I am absolutely devisated.  I look disgusting, how had I been so blind to my weight? I thought the blue dress at our party was slimming, turns out it was not disguising anything!

A few days after we return I head to the doctors for a pill review, she tells me I need to change pills to help my pain and bloating.  She suggests a certain pill but has to weigh me as being too overweight can cause strokes with this pill. I get weighed and she tells me I am obese and need to lose 2 stone to get the pill I need. It breaks my heart that my weight is stopping me having something I medically need. My mum mentioned rejoining Weight watchers but it did not really work for me as I found it too strict so I researched and found Slimming World.  I joined November 2009 weighed 15 stone 5.

I found Slimming World really easy, so much free food, not much restriction I could not believe I was losing weight and eating so much. I lost a stone pretty quickly but after that my weight loss slowed down as I became a 16 and feel more comfortable in my body so not too bothered about my weight. I manage to lose an extra stone in 2010 and come into 2011 just over 2 stone lighter.

I am still with Slimming World and have overcome so many obstacles, it is hard when you have had a good week and maintain or have a small gain but you have to keep going and pushing on and you do get the results eventually. I keep a food diary everyday now so I can see if I have gone wrong (and make sure I am not unconciously eating naughty things) and that really helps me.

I did want to be at target of 10st 5 for my holiday in July but I have relaxed a little and would like another stone and half off before then so I will only be a stone from my first target.

To date I have lost 2 stone 4lb, I have gone from a 18/20 to a 12/14, I feel comfortable and happier than before but still want to lose another 2 stone to be completely satified.  Joining Slimming World was the best thing I have ever done! Oh and I am now on the pill that I needed ;)

Hummus Recipe

A good friend of mine, Alison kindly sent me the following recipe after she saw my food tweet.  It's so quick and easy to make and you can adapt it to your own taste so I followed the recipe below and added some chillies and a bit of chilli powder to give it a kick.


1 tin of chick peas
Juice of half a lemon (adjust depending on taste)
1 clove of garlic (miles best if roasted but I generally add raw for convenience)
1 large red pepper (roasted skin side up under the grill until black and then sweat and peeled the skin off)
Smoked paprika
Salt & pepper
Fresh basil (or fresh herbs of your choice!)

Chuck all ingredients in the food processor (except red pepper) blend as much as you want then i add the pepper at the end and pulse a bit so it's still lumpy.

I find the trick is to add flavours to compensate for the lack of fat and I usually do roasted red pepper hummus.

Most of the low fat hummus recipes add fat-free yogurt/fromage frais but I think it ruins it, so I don’t bother. I just add a little bit of water if it’s too thick.

I play around with other flavours such as
Olives (low syn) coriander and ground cumin.
Sometimes I drain all the oil off a couple of sun dried tomatoes (with kitchen towel) like a mentalist and add those!
a SMALL blob of tahini if you fancy (non-essential) BUT what you can also do is add some dry toasted sesame seeds and mash them in a pestle and mortar and add them if you want to make it a little sesamey.

Thank you Alison this definitely makes all those veggies go down much easier and the amount I made using the recipe above makes enough for about 5 days so that's my snacks at work sorted for the week.  Alison has managed to lose a massive 23lbs this year following Slimming World principles, WELL DONE!!

Potato and Chickpea Curry

I found this lovely recipe on the Total Greek Yoghurt website and knew that I had to give it a go.  I love curry and chickpeas and potatoes make for the perfect combination.  I have altered the recipe to make it lower in syns and have added potatoes as they are amazing in a curry. 

My total life savers since starting Slimming World are both used in this recipe.  They are:



Ingredients
150g TOTAL 0% Greek Yoghurt 
2 sprays of frylight
1 small onion, peeled and diced
4 cloves garlic, crushed
3 tbs Madras curry paste
2 tins of chick peas, drained
200ml of tin chopped tomatoes
200ml vegetable stock (use a cube they are really good these days)
Half a bunch of coriander roughly chopped
2 Potatoes cubed and par boiled
 
Method
Peel and dice a couple of small potatoes and par boil them.


Dispense a couple of sprays of oil and heat in a thick bottomed pan.


Add the chopped onions and fry until soft but not coloured, add the crushed garlic and curry paste.


Cook for a further 2 minutes then add chickpeas, par boiled potatoes, tomatoes, Total Greek Yoghurt and vegetable stock.


Simmer for 30 minutes, until reduced and a creamy sauce has been achieved.  I also added some chilli powder to give it a kick.


I cooked some wholegrain basmati rice and allowed it to cool.  I then added a few sprays of frylight to a frying pan and fried the rice along with an egg.


Yum, yum, yum!


All the ingredients used are free on a green day except for the Madras paste which is 2 syns per tablespoon.  I used 3 tablespoons which equates to 6 syns for the total recipe and just 2 syns per portion.  I had the leftovers for lunch the next day, bonus!
